Location: Lowell, Indiana
6 garlic cloves, minced
2 Tablespoons Olive Oil
¼ cup honey
¼ cup lemon juice
1 tsp salt
1 tsp pepper

Trim any excess fat from meat. Place rack in large open roasting pan, bone side down.
Add lemon juice and let soak into meat. Sprinkle meat with salt, pepper, lemon juice, garlic and honey.

Pre-heat oven at 400 degrees, Sear lamb with a little oil in fan pan. Place in oven for 25 mins., remove and cover in foil and let rest for 10 to 15 mins.
